FlyingfishNew to the craft cider marketplace (and distributed nationally), but not new to the art of fermentation, are the folks behind Pacific Coast Hard Apple Cider. The Pacific Coast brand is the creation of the family behind Scotto Cellars, a five generation California winemaking family. Paul Scotto is the winemaker for Scotto Cellars as well as the cidermaker for their Pacific Coast cider brand. He explain that their vision of great craft cider is one that, like wine, delivers balance, complexity, nuance, mouthfeel, and drinkability. It’s very difficult to argue with this.  They use a blend of Granny Smith, Fuji, Red Delicious, Galas and Golden Russets to produce this craft cider. This hard apple cider should attract a good deal of attention as it rolls out across the country. It’s very attractive. Pacific Coast also producers a hard apple cider that is blended with a bit of Pinot Grigio wine, a brilliant idea that will come under review in the near future.

Pacific Coast Hard Apple CideThis new cider from Pacific Coast Cider opens with a beautiful, clear, clean effervescence and a color on the light gold side with hints of green. The tiny bubbles are very active. But what’s really remarkable about the Pacific Coast Hard Apple Cider is the beautiful aroma. Sweet dessert apples leap out of the glass and are consistent. It’s sweet green apple on the nose that is very attractive and that sits alongside hints of lemon and lime to round out the aromatics. The cider hits the palate with carbonation, acid, a touch of tannin, and a creaminess that spreads out across your palate. Flavors of sweet green apple, ripe lime and sweet summer herb follow along one after the other. I like this cider. It’s delicious, has a great balance of acid, sweetness and and light tannin. Again, however, it’s those remarkable and persistent aromas of Granny Smith apples that distinguish this cider. This isn’t dry cider, but it’s also not the sickly sweet stuff that is showing up under popular commercial labels. It’s a very likeable and drinkable style of craft cider. And what a great summer cider this will be.
